The Pacemaker's Drum is an ongoing participatory fermentation workshop and ritual meal cycle in Kolkata, West Bengal, conducted by the ██ Collective since 2022. Participants gather monthly to prepare mishti doi (sweetened yogurt curd) using extended slow-culture fermentation methods inherited from Kolkata's historic dai (wet nurse) and sweet-maker traditions.
The work reads Leif's external pacemaker—external governance of heartbeat—as analogous to fermentation itself: a living microbiome, inherited and passed on, that maintains its own rhythm within the body. Each participant creates a single jar of doi, assigned one of three fermentation speeds echoing the three injuries: slow-set (22 hours; "the mystery of blindness"); quick-set (12 hours; "the miracle of flight"); medium-set (18 hours; "the authority of the sovereign pulse"). Jars are sealed, labeled with the maker's name and a single heart-word, then incubated in communal terracotta pots at the shrine-kitchen on ██ Road.
After fermentation, the doi is tasted collectively and ritually gifted—never sold or kept. [citation needed] The sweetness is read as surgical caress: "a bacteria colony that learned to be tender." Participants report that tasting another's doi feels like hearing their heartbeat translated into milk. The collective has documented over ██ fermentation narratives, many framed as devotional anticipations of motherhood and birth. [1]
